Tender Pork Spare Ribs

Ingredients

Original recipe makes 8 servings

  • 1 cup brown sugar
  • 1/2 cup fajita seasoning (such as Fiesta®)
  • 2 tablespoons Hungarian sweet paprika
  • 2 racks pork spareribs, fat trimmed
  • 1 cup beer
  • 3 cloves garlic, minced
  • 1 tablespoon honey
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon prepared brown mustard

Directions

  1. Mix the brown sugar, fajita seasoning, and paprika in a bowl. Rub both sides of the pork spareribs with the brown sugar mixture. Place the spareribs in a 9×13-inch baking pan; cover and refrigerate overnight.
  2. Preheat an oven to 250 degrees F (120 degrees C). Whisk together the beer, garlic, honey, Worcestershire sauce, and mustard in a bowl. Set aside.
  3. Tear off 2 large sheets of heavy duty aluminum foil and lay them shiny-side down. Place a rack of spareribs on each sheet, meaty-side up. Tear off 2 more sheets of foil and place them on top of the ribs, shiny-side up. Begin tightly folding the edges of the foil together to create a sealed packet. Just before sealing completely, divide the beer mixture evenly into each packet. Complete the seal. Place the packets side-by-side on an 11×14-inch baking sheet.
  4. Bake in the preheated oven until the ribs are very tender, 3 hours and 30 minutes to 4 hours. Carefully open each packet, and drain the drippings into a saucepan. You may only need the drippings from one packet. Set ribs aside. Simmer the drippings over medium-high heat until the sauce begins to thicken, about 5 minutes. Brush the thickened sauce over the ribs.
  5. Preheat the oven’s broiler and set the oven rack about 6 inches from the heat source.
  6. Place the ribs back into the oven and broil until the sauce is lightly caramelized, 5 to 7 minutes.

  • 4 cups vegetable oil for frying
  • 1 egg
  • 1 1/2 pounds boneless, skinless chicken thighs, cut into 1/2 inch cubes
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 1 pinch white pepper
  • 1 cup cornstarch
  • 2 tablespoons vegetable oil
  • 3 tablespoons chopped green onion
  • 1 clove garlic, minced
  • 6 dried whole red chilies
  • 1 strip orange zest
  • 1/2 cup white sugar
  • 1/4 teaspoon ground ginger
  • 3 tablespoons chicken broth
  • 1 tablespoon rice vinegar
  • 1/4 cup soy sauce
  • 2 teaspoons sesame oil
  • 2 tablespoons peanut oil
  • 2 teaspoons cornstarch
  • 1/4 cup water

Directions

  1. Heat 4 cups vegetable oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  2. Beat the egg in a mixing bowl. Add the chicken cubes; sprinkle with salt, 1 teaspoon sugar, and white pepper; mix well. Mix in 1 cup of cornstarch a little bit at a time until the chicken cubes are well coated.
  3. In batches, carefully drop the chicken cubes into the hot oil one by one, cooking until they turns golden brown and begin to float, about 3 minutes. Remove the chicken and allow to cool as you fry the next batch. Once all of the chicken has been fried, refry the chicken, starting with the batch that was cooked first. Cook until the chicken turns deep golden brown, about 2 minutes more. Drain on a paper towel-lined plate.
  4. Heat 2 tablespoons vegetable oil in a wok or large skillet over high heat. Stir in the green onion, garlic, whole chiles, and orange zest. Cook and stir a minute or two until the garlic has turned golden and the chiles brighten. Add 1/2 cup sugar, the ginger, chicken broth, vinegar, soy sauce, sesame oil, and peanut oil; bring to a boil and cook for 3 minutes.
  5. Dissolve 2 teaspoons of cornstarch into the water, and stir into the boiling sauce. Return to a boil and cook until the sauce thickens and is no longer cloudy from the cornstarch, about 1 minute. Stir the chicken into the boiling sauce. Reduce heat to low and cook for a few minutes until the chicken absorbs some of the sauce.

  • 2 (2 pound) boneless pork loin roast
  • seasoning salt to taste
  • 2 cups apple juice
  • 1/2 cup apple butter
  • 1/4 cup brown sugar
  • 2 tablespoons water
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Season the pork loins with seasoning salt, and place them in a 9×13 inch baking dish or small roasting pan. Pour apple juice over the pork, and cover the dish with a lid or aluminum foil.
  3. Bake for 1 hour in the preheated oven. While the pork is roasting, mix together the apple butter, brown sugar, water, cinnamon, and cloves. Remove pork roasts from the oven, and spread with apple butter mixture.
  4. Cover, and return to the oven for 2 hours, or until fork-tender.

  • 1 pound spaghetti
  • 1 pound lean ground beef
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • garlic powder to taste
  • 1/2 cup chopped green bell pepper
  • 26 ounces Classico® Tomato and Basil Sauce
  • 3/4 cup sour cream
  • 1/2 cup chopped green onions
  • 1/2 (8 ounce) package cream cheese
  • 1 1/2 cups shredded Cheddar cheese

Directions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. In a skillet over medium heat, brown the ground beef. Drain and crumble. Put crumbled beef in skillet. Stir in salt, pepper, garlic powder, bell pepper and pasta sauce. Bring to a boil; reduce heat and simmer for 20 minutes.
  4. In a small bowl combine sour cream, green onions and cream cheese and set aside. Coat a 9×13 inch baking dish with cooking spray and add the cooked spaghetti. Spread the cream cheese mixture over it, add the meat mixture and sprinkle with Cheddar Cheese.
  5. Cover and bake for 25 minutes. Uncover and bake for 5 more minutes until the cheese is bubbly.

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Heat a roasting pan over medium high heat until hot. Rub the roast with the marjoram, salt and pepper. Brown all sides of the roast in the hot roasting pan. Sprinkle caraway seeds over all and pour in enough water to come halfway up the sides of the roast.
  3. Cover and place roast in the preheated oven. Bake for 1 1/2 hours, or until an internal temperature of 145 degrees F (63 degrees C) is reached, about 30 minutes per pound. Remove from oven and let sit for 10 minutes before carving.

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.
  3. Bake 1 hour in the preheated oven, to an internal temperature of 180 degrees F (85 degrees C).

  • 1 (2 pound) venison backstrap, cut into 1/4 inch thick slices
  • 2 cups milk
  • 2 tablespoons hot pepper sauce
  • 2 eggs
  • 1/2 cup milk
  • 3 cups all-purpose flour
  • 2 tablespoons salt
  • 1 tablespoon ground black pepper
  • 3 cups vegetable oil for frying

Directions

  1. Place the venison slices into a shallow bowl and pour in the milk and hot sauce. Stir to coat, then cover and marinate for 1 hour.
  2. Heat the vegetable oil in an electric skillet to 325 degrees F (165 degrees C). In a shallow bowl, whisk together the eggs and milk. In a separate bowl, stir together the flour, salt and pepper.
  3. Dip the venison slices into the flour, then into the egg and milk, then back into the flour. Shake off excess flour. Fry in the hot oil until lightly browned on each side, about 3 minutes. Remove with tongs and drain briefly on paper towels before serving.

  • 1 pound large shrimp, peeled and deveined and butterflied
  • 1 quart water
  • 1 1/2 cups cornstarch
  • 2 eggs

  1. Preheat deep fryer or skillet with oil to 350 degrees F (175 degrees C).
  2. In a large bowl, pour in water and mix in cornstarch and eggs.
  3. Dip the shrimp into the mixture allowing them to be completely coated. Then roll the shrimp in the breadcrumbs. Coat the shrimp well with the breadcrumbs. Mix up the cornstarch batter again. Dip the breadcrumbs coated shrimp back into the cornstarch batter. Roll the shrimp in the breadcrumbs for a second time. Repeat for each shrimp.
  4. Drop shrimp, one at a time, into the hot oil and cook shrimp until they are golden brown.

Pat the meat mixture out onto a piece of waxed paper, and flatten to 1/2 inch thick. Lay slices of ham onto the flattened meat, and top with slices of cheese. Pick up the edge of the waxed paper to roll the flattened meat up into a log. Remove waxed paper, seal the ends and seam, and place the loaf into a 9×5 inch loaf pan.
  3. Bake for 1 hour and 15 minutes in the preheated oven, or until the loaf is no longer pink inside.

  • 1 tablespoon olive oil
  • 1 (10 ounce) package fresh mushrooms, sliced
  • 1 large onion, chopped
  • 4 slices bacon, chopped
  • 3/4 cup heavy cream
  • 1 cup shredded Swiss cheese
  • salt and pepper to taste
  • 1 teaspoon chopped fresh dill
  • 1 (17.25 ounce) package frozen puff pastry, thawed
  • 1 egg, beaten

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Heat the oil in a large skillet over medium-high heat. Add the mushrooms, onion and bacon; cook and stir for about 5 minutes, or until vegetables are tender. Reduce the heat to medium, and add the cream and dill; cook and stir for about 10 more minutes. Remove from the heat, and stir in the cheese.
  3. Place one sheet of puff pastry on a well oiled baking sheet, and pour the mushroom filling over the top. Cover with the other sheet, and press the edges together to seal. Make some holes in the top with a fork. Brush the top with beaten egg.
  4. Bake for about 40 minutes in the preheated oven, or until golden brown. Cool, then cut into squares to serve.

Directions

  • 1 quart oil for frying
  • 1 pound cod fillets, cut into 2 to 3 ounce portions
  • 1 (12 ounce) package corn tortillas

  1. To make beer batter: In a large bowl, combine flour, cornstarch, baking powder, and salt. Blend egg and beer, then quickly stir into the flour mixture (don’t worry about a few lumps).
  2. To make white sauce: In a medium bowl, mix together yogurt and mayonnaise. Gradually stir in fresh lime juice until consistency is slightly runny. Season with jalapeno, capers, oregano, cumin, dill, and cayenne.
  3. Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  4. Dust fish pieces lightly with flour. Dip into beer batter, and fry until crisp and golden brown. Drain on paper towels. Lightly fry tortillas; not too crisp. To serve, place fried fish in a tortilla, and top with shredded cabbage, and white sauce.
